As a nation of brave, independent (and perhaps a touch stubborn) thinkers, we persevered with the liquid form of quinine as an antimalarial. These tonics were so bitter that the troops in India in the 1850s mixed them with gin and sugar to try and mask the terrible astringency. Thus, our wonderful G&T was born!
The British troops in India started a craze, and in 1858, the first commercial tonic waters were produced to meet demand at home and abroad. Modern tonic waters only use quinine for flavouring, and the resurgence in interest in gin has created the need for new and exciting tonics. One of the key elements to tonic is the use of very small bubbles to give a smooth texture and allow the nuances of flavour to carry through; we believe that Original Tonics, with their natural sugars and small bubbles, are the perfect enhancement to any gin.
